From Ruins to Reefs: Our Unforgettable Belize Journey

In December 2025, we set out on a carefully planned trip to Belize, eager to explore its tropical beauty, rich history, and culture. This vibrant country, brimming with breathtaking natural beauty, a rich tapestry of history, and a culture as colorful as its coral reefs, became the backdrop for countless unforgettable moments. Join us as we recount our day-by-day journey through this captivating paradise—filled with mouthwatering cuisine, awe-inspiring sights, and delightful surprises around every corner!

Day 1: Arrival and Settling In

Our journey began on December 21, as we navigated the lively bustle of Belize City airport (BZE) before setting out on a scenic drive to Santa Cruz cabins in Santa Elena.

The ride itself was an experience, with the roads exuding a rustic charm that evoked memories of rural areas in Bangladesh. The winding paths framed by greenery gave us a glimpse into the quieter side of Belizean life.

Upon arriving at Santa Cruz cabins, we were greeted by the welcoming embrace of a tranquil haven. Nestled amidst lush foliage, these cozy accommodations were both picturesque and comforting—a much-needed retreat after a day of travel. The serene surroundings and peaceful atmosphere offered the perfect backdrop to unwind and recharge.

Our evening culminated in a culinary delight at Tolacca Smokehouse BBQ, where we were introduced to the rich and vibrant flavors of Belizean cuisine. The smoky, perfectly cooked dishes were a feast for the senses and left us eager to explore more of the country’s gastronomic treasures in the days ahead.

Day 2: ATM Cave Magic

Our day began with a delightful homemade breakfast at the cabins, showcasing Belizean flavors at their finest. We savored fried jacks, caramelized plantains, scrambled eggs infused with Chaya (a nutrient-rich leafy green, also called Maya spinach), creamy refried beans, and refreshing papaya juice—a meal as vibrant as the surrounding greenery and a perfect start to our adventures.



The highlight of the day was an unforgettable expedition to the legendary Actun Tunichil Muknal (ATM) Cave, an experience that truly transcends words. Guided by the knowledgeable team at Limpkin Tours, we first hiked through the breathtaking jungle of the Tapir Mountain Nature Reserve, a dense and vibrant ecosystem filled with lush vegetation. Unfortunately, the cave’s strict no-camera policy meant we couldn’t capture any photos, leaving us to treasure the experience solely through memory (pictures here are collected from stock photos in the web).

The journey to the cave’s entrance was as thrilling as it was challenging. We crossed Roaring Creek not once but three times, swimming and pulling ourselves along ropes against the currents. At certain points, the water was high enough to soak us entirely. The adventure intensified as we reached the cave’s entrance and swam again to gain entry. Equipped with helmets and headlights, we plunged into the dark, mysterious world of the cave.


For the next three hours, we navigated an extraordinary labyrinth of chambers and passageways, climbing over jagged rocks, swimming through open pools, and squeezing through narrow crevices. The ATM Cave unfolded its secrets as we ventured deeper—an array of glittering stalactites and stalagmites that sparkled like nature’s jewels. As we explored further, we encountered fascinating remnants of Mayan culture, including ceremonial pottery and skeletal remains. Among them was "The Crystal Maiden," a captivating calcified skeleton that shimmered under our headlights, evoking both wonder and reverence.


The entire experience was a blend of physical endurance and awe-inspiring discovery, immersing us in the profound spirituality and rituals of the ancient Maya. After emerging from the depths of the cave, we rewarded ourselves with a hearty lunch provided by the tour. The meal—barbecue chicken, rice with beans, fresh salad, sweet plantains, and ripe fruits—was a satisfying end to a day filled with adventure and cultural exploration. 


This excursion was, without a doubt, one of the most remarkable highlights of our trip.

Day 3: Ruins and Markets

The next day was a day filled with the wonders of history and culture. Our journey began with a visit to the iconic Xunantunich Mayan ruins, majestically perched atop a hill that offered sweeping panoramic views of the surrounding jungle. To reach this extraordinary site, we crossed the serene Mopan River aboard a hand-cranked ferry—a quaint and charming experience that felt like a step back in time.


Situated on a high ridge overlooking the Mopan River, Xunantunich, meaning “Maiden of the Stone Woman,” is a Classic Maya archaeological zone dating back to 200–900 CE. This awe-inspiring site is located in western Belize, near the border with Guatemala, adding to its cultural richness. 


The towering El Castillo pyramid, the site’s crown jewel, was a testament to the engineering prowess and artistic brilliance of the Maya. 


As we ascended its steep, weathered steps, the breathtaking views unfolded with every climb—rolling hills, dense greenery, and even glimpses of Guatemala. The site emanated a sense of ancient grandeur, sparking vivid imaginings of the thriving civilization that once called it home.


Following our exploration of Xunantunich, we headed to the vibrant San Ignacio farmers market, a bustling hub of local life brimming with colors, aromas, and treasures. The market felt like a nostalgic haven—a fruit paradise where we found familiar favorites from our childhood in Bangladesh. Amra (golden plum), boroi (plum), sofeda (sapodilla), kamranga (star fruit), shobri kola (baby bananas), and fresh green coconuts brought back cherished memories and filled us with excitement. The sight, smell, and taste of these fruits were nothing short of magical.


For lunch, we indulged in the culinary delights of Cenaida's Belizean Food. The shrimp dishes stole the show with their exceptional flavors, leaving us thoroughly satisfied and ready for the next adventure. 


After a restorative nap, we rounded off the day with a visit to the Cahal Pech ruins. Although smaller than Xunantunich, Cahal Pech captivated us with its intricate courtyards, well-preserved structures, and intimate charm. The setting was tranquil, allowing us to appreciate its historical significance and reflect on the Maya’s enduring legacy.


This day was truly a celebration of Belize’s rich heritage, natural beauty, and cultural flavors—a memory we’ll cherish for years to come.

Day 4: Chocolate and Water Adventures

This was our very last day at the beautiful Santa Cruz cabins...



After bidding a bittersweet goodbye to our home for the last few days, we enjoyed a chocolate-making and tasting tour at Ajaw—an experience as rich and sweet as the chocolate itself. This immersive experience offered us a glimpse into the ancient Mayan connection to cacao, the "food of the gods."

The tour began with a warm introduction from our guide, who shared the history and cultural importance of cacao in Mayan civilization. We learned how cacao beans were used not only as a key ingredient in rituals and ceremonies but also as currency in ancient trade—a detail that truly surprised us!

Next, we stepped into the process of traditional chocolate-making. Armed with a metate (a stone tool used for grinding), we crushed roasted cacao nibs into a paste, just as the Maya have done for centuries. It was a hands-on and somewhat therapeutic experience, accompanied by the rich, earthy aroma of cacao.



Once the paste was formed, we mixed it with water, as the Maya did to make their traditional chocolate drink. To suit modern palates, we were given the option of adding sweeteners like sugar or honey, along with spices such as cinnamon and chili. The result was a bold, bittersweet drink that brought the raw essence of cacao to life—it was nothing like modern chocolate but had an incredibly pure and authentic taste.

We also sampled a variety of artisanal chocolate products crafted on-site, from dark chocolate bars to cacao-based snacks. The depth of flavor in each bite was extraordinary—proof of Ajaw’s commitment to preserving traditional methods.


Beyond just tasting chocolate, this tour deepened our appreciation for the hard work and skill involved in turning cacao beans into the beloved treats we know today. The friendly and knowledgeable team at Ajaw made the experience both educational and enjoyable—a must-visit for any chocolate enthusiast.

After driving to Belize City and returning our rental car, we hopped on a water taxi to San Pedro and checked into the Mara Laguna Suite. It was time to shift gears to island life!


Day 5: Snorkeling and Sunset

The day began on a delightful note with breakfast at Farmhouse Café, a cozy spot where we enjoyed freshly brewed coffee and flavorful dishes that set the tone for an exciting day ahead. 


Energized and ready, we embarked on the Xsite Belize Snorkeling Tour—a highlight of our trip and an unforgettable journey into the underwater wonders of Belize.

Our first stop was the Hol Chan Marine Reserve, a protected area teeming with marine life. As we slipped into the crystal-clear waters, we found ourselves surrounded by a vibrant world of coral reefs and colorful fish darting playfully around us.

Next, we headed to Shark Ray Alley, an exhilarating experience that brought us up close to nurse sharks and stingrays. While the thought of sharing the water with these creatures was initially a bit intimidating, their calm demeanor quickly put us at ease. It was a surreal and humbling experience to observe these magnificent animals in their natural habitat.

The final snorkeling stop took us to the serene island of Caye Caulker, where the pace of life seemed to slow down even further. The island's charm and laid-back vibe were unmistakable, making it a perfect spot to unwind. 



Unfortunately, lunch plans at Happy Lobster didn’t quite go as expected due to a long wait and some logistical hiccups. Nevertheless, we made do with some quick snacks and carried on with our day.

The true magic unfolded as evening approached. Returning back to San Pedro on our catamaran, we were treated to a breathtaking sunset. As the sun dipped below the horizon, painting the sky in hues of orange, pink, and purple, we couldn’t help but feel a deep sense of gratitude for the beauty surrounding us. The gentle sea breeze and the soothing sound of waves provided the perfect backdrop to this mesmerizing experience.


To round off the day, we explored the island on a rented golf cart, embracing the fun and laid-back spirit of San Pedro. The freedom to cruise around at our own pace allowed us to soak in the island's charm and discover hidden corners. 


It was a day filled with adventure, natural beauty, and moments that will stay with us forever.

Day 6: Aerial Views of the Great Blue Hole

The morning began with a bit of a breakfast misadventure when our plan to grab a bite at a French croissant bakery didn’t pan out—the bakery wasn’t ready to serve yet! Unfazed, we made our way back to the ever-reliable Farmhouse Café. The welcoming ambiance and comforting familiarity were just what we needed to start the day on a high note.


The highlight of the day and the entire trip was an exhilarating aerial tour of the Great Blue Hole with Tropic Air. This experience was nothing short of magical, providing us with a bird’s-eye view of one of the world’s most iconic natural wonders. As the small plane soared over the turquoise expanse of the Caribbean Sea, the stunning circular sinkhole—framed by the deeper blue of the ocean—unfolded beneath us, looking even more surreal than we had imagined.



The beauty didn’t stop there. The tour took us over Lighthouse Reef Atoll, with its rich ecosystem of coral reefs and shimmering lagoons, and the sprawling Belize Barrier Reef, the longest in the Western Hemisphere. The vibrant blues and greens of the water created a mesmerizing palette, and the pristine beauty of these protected areas left us awestruck. The journey also included a flight over Turneffe Atoll, another gem of Belize’s marine landscape.


Adding to the magic were the incredible wildlife sightings. With our eyes glued to the waters below, we spotted rays gracefully gliding, dolphins playfully darting, and even a few sharks swimming in the clear depths. It was like watching nature’s own symphony unfold from the skies.

Lunch was at Someplace South (yes, that is the name of the restaurant!) and the food was simply mouthwatering.


In the evening, we rounded off the day with a satisfying dinner at Maxie’s. The food was flavorful and expertly prepared, serving as the perfect end to an awe-inspiring day. The relaxed atmosphere, paired with the delicious dishes, set the tone for an evening of good vibes and reflection on the unforgettable sights we had experienced. 


It was a day filled with wonder, beauty, and moments we’ll carry with us forever.

Day 7: Secret Beach Serenity

Secret Beach was a tropical bliss. Nestled along the picturesque shores of Ambergris Caye, this vibrant and lively spot offered the perfect combination of tranquil waters and a festive atmosphere. Lounge chairs and hammocks dotted the shoreline, creating an idyllic setting to simply unwind and soak up the island vibes.


For lunch, we made our way to Blue Bayou, a charming eatery perched above the water on stilts. With tables partially submerged in the shallow lagoon, we had the unique experience of dining with our feet gently resting in the water. 


The food was as delightful as the setting, with fresh, flavorful dishes that embodied the essence of Belizean cuisine. It was a meal we savored slowly, accompanied by the sounds of gentle waves and laughter from fellow beachgoers.


After lunch, we sought out a sweet treat at Paradice Ice Cream, a beloved local spot known for its creamy, refreshing offerings. The selection of flavors was delightful, and each bite was a welcome escape from the afternoon heat.

In the late afternoon, our leisurely walk around the San Pedro town revealed a treasure trove of charming shops, colorful murals, and friendly locals who were always ready to share a smile. The laid-back vibe of the town was infectious, and it was a joy to explore its vibrant streets and uncover little surprises at every turn.


As the evening rolled in, we headed to Hidden Treasure Restaurant for dinner—a culinary highlight of our trip. The restaurant lived up to its name, tucked away like a true hidden gem. The ambiance was enchanting, with its warm lighting, rustic wooden decor, and lush greenery creating a cozy yet elegant setting.

The meal was nothing short of spectacular, showcasing the best of Caribbean flavors. The jerk shrimp curry was a standout, perfectly spiced and bursting with bold, rich tastes. The almond-crusted snapper was equally impressive, with its delicate, flaky texture complemented by a satisfying crunch. Other dishes like the Caribbean shrimp curry and the expertly cooked filet mignon rounded out an unforgettable dining experience. 


It was the perfect end to a day filled with relaxation, indulgence, and the undeniable charm of Ambergris Caye.

Day 8: Farewell Belize

Our final day in Belize was a bittersweet goodbye to this beautiful country that had given us so many unforgettable moments. The morning began with a comforting ritual—coffee at the Farmhouse Café. The inviting aroma of freshly brewed coffee and the café's cozy ambiance was the perfect way to savor our last moments on the island. Each sip brought a sense of calm, allowing us to reflect on the extraordinary journey we had experienced over the past week.

Soon, it was time to bid farewell to Ambergris Caye as the water taxi carried us back to Belize City. The ride itself was a serene experience, with the gentle rocking of the boat and the sparkling Caribbean waters stretching as far as the eye could see. Watching the coastline fade into the distance was a poignant reminder of the island’s laid-back charm and unspoiled beauty.



Arriving in Belize City, we made our way to the airport, where we boarded our flight home. As the plane ascended, we gazed out of the window for one last glimpse of the lush jungles, vivid blue waters, and the vibrant towns that had made our journey so special. Though leaving was difficult, we carried with us cherished memories of snorkeling among marine wonders, wandering through ancient Mayan ruins, and indulging in the bold flavors of Belizean cuisine.


Our time in Belize was more than just a vacation—it was an adventure that immersed us in a rich tapestry of history, culture, and nature. We left with a renewed appreciation for the country's beauty and a promise to return someday to explore even more of its wonders. Belize will always hold a special place in our hearts…

Some Quirky Observations

  1. Speed bumps galore! Belizeans love their speed bumps—everywhere, even on highways. Yet, traffic stop lights? Not so much. San Ignacio had just one operational traffic light, and it has an amazing work-life balance with a day off on Sundays!

  2. Island time vibes. The island pace is beyond laid-back—our lunch wait of 45+ minutes (that too without the food prep even getting started for our table) at Happy Lobster proved that! Patience is key when embracing Belizean island life.

  3. Chaotic airport charm. BZE airport was a whirlwind, with crowded spaces and chaotic immigration—but the clean restrooms were a pleasant surprise and a welcome reprieve.

  4. Pricey gas. Gas prices were nearly double what we’re used to in Seattle—a surprising contrast given the local minimum wage.
